**UPDATE **It is with much sadness that I report that the Baltimore location of Dinosaur Bar-B-Que has closed. However, these wings will most likely always be a favorite of ours, so we highly recommend visiting a Dinosaur location anytime you’re in NY.**
I’ll just say it up front. These are my favorite wings, ever. Dinosaur Bar-B-Que has a bonafide star on their hands in their Chipotle Garlic chicken wings. Smoked, sauced, and grilled over and open flame to perfection. These are a work of barbecue beauty. The funny thing is I almost never tried them.
Dinosaur Bar-b-que is a favorite where I come from, so when I heard they were coming to the Fells Point neighborhood of Baltimore, I was ecstatic! They’re known mostly for their amazing pulled pork. Yeah, yeah, yeah…you can tell me all you want that the south has the best BBQ, but Dinosaur’s pulled pork and Sensuous Slathering Sauce (tomato and vinegar based) can hold it’s own against the best of the south. I’ve never seen deeper smoke ring.
I never bothered to look at the menu because the pork is so good. I always ordered the Big Ass Pork Plate. And it’s likely I never would have seen them until a ventured there one evening with a friend who suggested them as an appetizer. Well, it was love at first bite. I’d consider the Chipotle Garlic wings to be on the strong side of medium with a heat that builds slightly through the course of eating. (I once ate them with chapped lips…not a good decision.) I drag my wife out to baltimore about once a month so I can have more. And they’re not deep fried. That means they’re healthier, right?
How they rate: Dinosaur Barbecue – Chipotle Garlic Wings
Though there’s not a deep crunch on these wings, the method of saucing them and throwing over an open flame does wonders. In addition to crisping up the wing, the flame causes the sauce to stiffen and glaze a touch. Plus it gives us those little blackened bits. Smoked, sauced, and grilled, and oh so good!
Dinosaur’s sauces are all wonderful, and they don’t skimp on piling it on. I have no idea what they actually do, but in my mind each wing gets dunked individually in a bucket of sauce so it’s fully coated before it hits the grill. It’s a thick sauce that’ll covers your fingers too, and leave enough to drag some celery through.
The chipotle flavor is the predominant note, as it should be. They’re slightly sweet, and have a good amount of smokiness to them thanks to their first cooking process. Dinosaur has mastered the art of smoking meats. The sauce is enhanced by spending time on the grill. The charred bits from the grill that caramelize not only make them look pretty, but aid in the flavor too.
Start to Finish:
These only reason I’ve not wanted to finish these is because I’m full. And even then I’ll push myself. They’re too good to leave any sitting on the plate. I’ll often opt for a bakers dozen as my meal. And these are big wings, so even for a hungry man like myself, it can be a challenge to get through them all.
As an Upstate New York original, I’d expect nothing less than what we get: a mildly chunky blue cheese and fresh, crisp celery. The whole plate is dusted with their dry rub which adds a little something extra. They’re happy to replenish both the celery and blue cheese at no extra charge.
